Introduction

These one bowl super healthy oat bran muffins taste just like you're biting into a baked apple. They can be gluten free by substituting gluten free flour and gluten free oat bran and/or vegan by substituting almond or nut milk for the milk and using an extra container of coconut/soy yogurt instead of an egg. Ingredients

    6 oz Maple Yogurt (I used whole milk yogurt)
    3 cup Oat Bran
    1 cup Applesauce, unsweetened
    2 tbsp Coconut Oil Organic (warmed to it's liquid state)
    .5 cup Milk, nonfat (skim milk)
    1 large Egg, fresh, whole, raw
    2 Tblsp vanilla extract (or good brandy/bourbon)
    3/4 cup PURE Maple Syrup
    1.25 cup All purpose flour (or gluten free)
    4 tbsp Cinnamon, ground
    1 tsp Chinese Five-Spice Powder - (if you don't have this on hand use ground ginger)
    2 tsp Allspice
    2 tsp Nutmeg, ground
    1 tsp Salt
    4 tsp Baking Powder
    2 medium Granny smith apples peeled, cored and chopped into cubes

Tips

You can make this GF or Vegan and they taste great! At less than 80 calories a muffin these are the perfect morning snack with coffee!


Directions

Preheat oven to 350 F. Line 2 12-cup muffin tins and 1 6-cup muffin tin with muffin liners. I'd use muffin liners because the apple and muffin mixture is sticky and doesn't come out easy with just using a cooking spray.

Mix in a large bowl: oat bran, yogurt and milk. Let the oat bran soak up the moisture for about 10 minutes.

Stir in the rest of the wet ingredients (coconut oil, apple sauce, egg, maple syrup, vanilla extract). Mix until it is combined.

Add the dry ingredients (flour, cinnamon, chinese five spice, allspice, nutmeg, salt and baking powder. Mix to incorporate. Fold in diced apples.

Put in lined muffin pans (I use a 3/4 cup cookie scoop to make sure I get all the muffins the same size).

Bake for 15-18 minutes or until a toothpick inserted comes away clean.

Serving Size: makes 30 muffins, serving size 1 muffin (if you can eat just one!)
