Ingredients

    1.5 tbsp Extra Virgin Olive Oil
    .5 tbsp Balsamic Vinegar
    .25 glass (3.5 fl oz) Red Wine
    2 clove Garlic
    .10 cup Leeks
    1 stalk, large (11"-12" long) Celery, raw
    6 serving Cherry Tomatoes, Fresh, 1 Tomato

Tips

dice the veggies the night before if you are pressed for time. weight the tofu the night before inside the fridge (in a bowl with a weighted mug). the drier the tofu, the better the dish.

if you want spiralize the zucchini the night before and get it into a bowl with a paper towel on the bottom so it too can dry out.

this is well worth it if you can't have pasta (wheat, gluten) for low carb, keto, diabetic, gluten.

If you do not know what a spiralizer is then put that word into the browser box on amazon and buy a cheap one. I purchased one on amazon 5 years ago for 20 years and it is still growing strong.

zucchilini cost 20 bucks when eating out. your dish will be better.


Directions

I use a cast iron skillet. sizzle the garlic in extra virgin (only) olive oil. dice and toss in all the veggies and the red wine and balsamic. Add the cubed lite (only) tofu that has been previously weighted (to leach water) and cubed. sprinkle fresh herbs. cover and steam a bit.

spiralize the zucchini while sauce is cooking. peel the zucchini if you like. place spiralized zucchini in colander or on paper towels so it will leach water.

do NOT steam or boil zucchini it will wilt into babyfood...

when sauce is done plate zucchini - microwave for 15 seconds only then top with hot spaghetti sauce.

Serving Size: this is lite tofu and not very filling and zucchini has little calories or bulk to it. so there is only 3 servings for this recipe. what you do not have in calories you will make up in volume.
