Introduction

A very mild flavored fish cake. You might be tempted to use canned salmon for the convenience, but the taste is amazing if you use fresh fish! A very mild flavored fish cake. You might be tempted to use canned salmon for the convenience, but the taste is amazing if you use fresh fish!
Number of Servings: 8

Ingredients

    15 oz Fish, Atlantic Salmon, Fresh
    4 oz Smoked Salmon (lox)
    1 cup Mashed Potatoes
    1 tbsp Lemon juice
    3 tsp Grey Poupon Dijon Mustard
    1 tsp Crystal Hot Sauce (by MISS_CANDICE)
    .5 tsp Pepper, black
    1 tbsp Parsley

Directions

Poach the salmon in lightly seasoned water until cooked through. Cool, and then flake into a large bowl. Flake the smoked salmon into the bowl as well. Add the mashed potatoes, lemon juice, mustard, hot sauce, freshly ground black pepper, and the parsley. Mix thoroughly, and form into 8 equal sized patties or cakes.

Spray a large skillet with Pam, and heat over medium high heat. Cook 4 at a time until crispy and a dark golden brown on each side. Delicious on their own, or with sides of your choosing.

Serving Size: It makes 8 cakes.
