Introduction

YUM!! This turned out great!! More of a meal than snack stats, but worth it in my book!! YUM!! This turned out great!! More of a meal than snack stats, but worth it in my book!!

Ingredients

    6 TB butter
    1 TB I can't believe its not butter lite spread
    1/2 cup Splenda with sugar
    2 tsp Splenda with sugar
    1 tsp vanilla
    1 tsp lemon juice
    2 eggs
    1 cup (3 ripe) bananas mashed
    1 tsp baking powder
    1.75 cups of flour
    1/2 salt
    1 tsp baking soda
    1/3 cup Daisy lite sour cream
    10 pecans, chopped
    1/4 cup chocolate chips, chopped

Directions

Preheat oven to 350 degrees.
Spray loaf pan with nonstick cooking spray and sprinkle with 2 tsp Splenda sugar blend.

Cream butter, sugar, vanilla and lemon juice. Add eggs and mix after each. Add flour, baking soda, baking powder and sour cream. Mix to combine. Fold in nuts and chocolate chips.

Bake in loaf pan at 350 degrees for 60 minutes, check for doneness with knife inserted into middle of loaf. Bake additional 10 minutes if needed.

Cut into 9 equal pieces. Serves 9.
