Introduction

These little muffins are quick and easy to grab on the go. Bake now and nuke them again at work. These little muffins are quick and easy to grab on the go. Bake now and nuke them again at work.

Ingredients

    2 cup Egg White--All Whites 100% liquid egg whites
    .5 cup Baby Spinach (raw)
    1 serving Bacon, Apple Smoked, Uncured, Trader Joe's
    .8 cup, chopped Onions, raw
    .75 oz Goat Cheese, Soft

Directions

Cook Bacon according to package. Slice a slice of onion and chop, then add to pan and sautee. Grab handful of spinach and chop to get about 1/2 a cup. Set aside. In a medium size mixing bowl, add a carton of eggwhites, sauteed onion, chopped spinach, and one piece of chopped bacon and just less than a serving of goat cheese and mix well. Spake a muffin tin w/ Coconut oil and with a ladle, pour egg mixture into 9 muffin tins. Bake at 400 for 12 min.
