Introduction

This is a great way to make some quick grab breakfasts on the go! I found a few recipes on pinterest and tweaked them to my own tastes, and this was the result! :) Enjoy! Ingredients

    5 cup Quaker Oats Old-Fashioned Rolled Oats
    2 cups Motts unsweetened Applesauce
    2 large Egg, fresh, whole, raw
    0.5 cup Honey
    3 tsp Baking Powder
    1 tsp Salt
    1 tbsp Nutmeg, ground
    2 cups Silk Pure Coconut Milk - Vanilla
    2 tsp Vanilla Extract
    1 pint of fresh strawberries, chopped
    2 tbsp Flax Seed Meal (ground flax)
    1 cup, mashed Banana, fresh

Tips

You can top them with anything -I just happened to have ripe strawberries in my fridge. Change the spices up (use cinnamon instead of nutmeg, etc.)


Directions

Mix applesauce, honey, egg, mashed banana, vanilla together. Add in oats and flax meal, baking powder, salt, nutmeg and mix.

Add milk, mix well.

Add strawberries, reserving about 1 cup to sprinkle on top.

Spray a 12 cup muffin tin with cooking spray (I prefer Pam "baking" spray, things never stick!). Fill each muffin tin to the top, then sprinkle with strawberries (you'll have to make 2 batches, FYI).

Bake at 350 degrees for 35 minutes (make sure tooth pick comes out clean). Let sit in the pan for 10 minutes to cool, then transfer to a cooling rack. Refrigerate or freeze and eat as desired. I recommend heating them up in the microwave first (15-30 seconds).
