Introduction
Serve these delightful fish cakes on their own as an appetizer, or stuff 2 fishcakes in a 6-inch whole-wheat pita pocket with some romaine lettuce, sliced cucumbers, sliced onions and sliced tomatoes, and drizzle on some tzatziki or plain fat-free yogurt to make a filling sandwich. Ingredients

1 can (170 grams) chunk tuna in water, drained
1/2 medium potato
1/2 cup frozen mixed vegetables (I used an Italian mix: zucchini, carrots, cauliflower and fava beans)
1 tsp minced ginger
2 tbsp minced raw onion
2 minced hot Thai peppers (optional)
1/2 tsp. garam masala
salt, cayenne pepper and/or black pepper to taste
olive oil spray
Directions
- Peel and dice the potato, then boil for about 5 minutes
- Add frozen vegetables to the boiling potatoes and let cook until the potatoes are well done (about 4 minutes longer).
- Remove from heat, drain, and mash well
- Add onion, ginger and optional Thai peppers and mix.
- Add spices (the tuna is well-salted, so you may not need additional salt).If you like it spicier, substitute cayenne to taste instead of the black pepper.
- Add tuna and mix well, breaking up any lumps with your fingers or a fork
- Form six flat patties, pressing well so they hold their shape
- Spray a pan with the olive oil spray, and set on moderate-high heat
- When the pan is warm, slide in the patties.
- Cook the patties for 3 to 5 minutes on each side (some like them crisp)
Makes 6 1.5-inch patties, 2 patties to a serving.
