Ingredients

    4 large Egg, fresh, whole, raw
    1 cup Egg White--All Whites 100% liquid egg whites
    .5 pepper Jalapeno Peppers
    .5 cup, chopped Onions, raw
    .5 cup, chopped or sliced Red Ripe Tomatoes
    1.5 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil

    .5 fruit without skin and seeds Avocados, California (Haas)
    1 cup Kraft Natural Cheese Mexican Style Cheddar Jack Finely Shredded

Tips

Use all egg whites and vegetable oil spray for a lower fat option.


Directions

Cook turkey sausage with 1/2 T of the coconut oil. Remove from fry pan and set aside. Add the other 1T of coconut oil and sautee onions and chopped jalapeno for two minutes. Add tomato and sautee for another minute. Whip together eggs and egg whites and add to fry pan. Stir briefly so the onion, pepper, and tomatoes are distributed evenly. Cook for 10 minutes or until set. If you can flip this, great. If not, finish cooking under a broiler in the oven for 2-3 minutes. Slice the turkey sausage in half length-wise and place on 1/2 of the omlette. Top with slices of Avocado and about 1/3 of the cheese. Fold over and top with the rest of the cheese. Place back under the broiler until cheese melts. Cut into 4 evenly sliced wedges and serve with a side of salsa.
