Ingredients

    5.0 1tsp Olive Oil
    1.25 lb Lamb, Cubed
    1.0 medium (2-1/2" dia) Onions, raw
    3.0 cloves Garlic
    0.5 tsp Paprika
    0.5 cup, halves Apricots, dried
    0.5 cup, pitted Prunes, dried
    0.25 cup, halves Pears, dried
    1.0 can Tomatoes, red, ripe, canned, whole, no salt added
    10.0 tbsp Cilantro, raw

Directions

In a 5qt saucepan with a tight fitting lid, heat oil over high heat. Swirl to coat bottom of pan. Season lamb with salt and pepper. Cook in oil till brown 3-5 min. Transfer to plate. Reduce heat to medium. Add onion and garlic; cook stirring occasionally until softened 2-4 minutes. Add paprika, apricots, prunes, pears, tomatoes and 3 cups water. Bring to a boil; reduce heat. Simmer partially covered until tomatoes begin breaking apart and sauce is thickened. About 25 to 30 minutes . Return lamb to pot, and any juices in plate. Cook till heated about 1 minute. Stir in cilantro and enjoy.
