Introduction

Ingredients

Dry ingredients:
2 cup Flour, white (I use unbleached)
.5 cup Granulated Sugar
.75 tsp Salt
.5 tsp Baking Soda
1 T (3 tsp) Baking Powder
Wet ingredients:
.75 cup Milk Cashew (Silk) - 1 cup (240ml)
1 large Egg, fresh, whole, raw
1.5 cup, mashed Banana, fresh (about 3 large bananas)
.5 cup Applesauce, unsweetened
Optional nuts (included in nutrition calculation)
.5 cup, halves Pecans (may leave whole or chop; walnuts would work, too)
Tips
To save more fat, use an egg replacer.
Directions
Preheat oven to 350F (or 325 if using glass bakeware). Use non-stick loaf pan or grease the pan if it's not non-stick.
In a medium mixing bowl, mix the dry ingredients well with a fork or whisk.
In a small bowl, mix the wet ingredients together well with a fork or whisk.
Add the wet to the dry and mix until just moistened with a spoon. A few lumps may remain; that's okay. Stir in the nuts if you're using them.
Pour mixture into loaf pan and bake about 50 minutes or so, until a toothpick or clean knife remains clean when you prick the center of the bread.
Allow to cool for a few minutes before slicing.
