Introduction
Can you tell I'm on a Kamut kick? I can't help it - this versatile grain is so delicious! This is a great after-school (or take along) treat, and you can swap out the almond milk for soy, rice or cow's milk of you prefer. Basically, it's Rice Krispies with no butter and Kamut. The puffs can be found in health food stores, Nature's Path makes a version of it. Can you tell I'm on a Kamut kick? Ingredients
-
4 cups mini marshmallows
1/4 cup unsweetened plain almond milk (I like Almond Breeze)
5 cups puffed Kamut
Directions
Line a 9" x 13" baking dish with parchment paper (so it overhangs the ends) and spritz with non-stick cooking spray. Set aside.
In a very large pot over low heat, combine marshmallows and almond milk, stirring occasionally until melted.
When the marshmallows have melted, turn heat up to medium and boil mixture for 3 minutes, stirring constantly.
Remove from heat, and stir in puffed Kamut.
Turn into baking dish and press down cereal mixture with the back of a damp spoon. Allow to cool completely before cutting.
