Ingredients

    2½ Tbsp olive oil
    ¼ cup butter, melted
    1½ lemons, juiced
    3 Tbsp brown mustard
    ½ cup minced fresh basil
    3 cloves garlic, minced
    white pepper to taste
    3 lbs large fresh shrimp, peeled and deveined with tails on
    bamboo skewers*

Directions

Makes 9 servings

In a shallow non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard basil and garlic. Season with white pepper to taste. Add shrimp and toss to coat. Cover and refrigerate for 1 hour.
Preheat grill to hight heat. Remove shrimp from marinade and thread onto skewers. ØDiscard marindade.
Lightly oil grill grate and marrange skewers on preheated grill. Cook for 4 minutes, turning once or until shrimp are opaque.

*To prep bamboo skewers soak in water for at least 30 minutes to prevent burning during grilling.
ØThe marinade may be boiled to kill any bacteria and used during grilling as a brush-on.

    Very Good
    I think there may be an error in the recipe. Its a little mustard heavy for me- I reduced it to teaspoons rather than tablespoons and increased the lemon juice and I think it came out a lot better! It was very simple to make I paired it with summer veggies and it made a great meal. - 8/7/08

    Incredible!
    I was so excited to see basil in this recipe as I have lots of sweet basil in the garden. It takes a few minutes to prepare, and the flavor is awesome. We use a large grill pan to cook these and it cuts down of prep time. We love this recipe and have served it to guests. This one is a keeper. - 6/21/08
