Ingredients

    1\2 Onion, sweet, raw chopped
    2 Jalapeno Pepper - Raw chopped
    3 clove Garlic, raw chopped
    1 tbsp Extra Virgin Olive Oil
    2 Roma Tomatoes, Fresh chopped
    25 oz Chicken-Kirkland canned chicken breast
    8 cup Kirkland Signature Organic Chicken Stock / Broth
    Cilantro, raw chopped
    .5 tsp Chili powder
    .5 tsp Coriander ground McCormick
    1 tsp Cumin ground, McCormick
    1 tsp Black Pepper, Ground
    1 tsp Salt
    Optional:
    Cooked brown rice
    Tortilla strips
    Cotija cheese crumbled
    Avocado

Directions

Sauté onion, garlic, and jalapeno in oil and cook for 1-2 minutes.
Add tomatoes and cook 1-2 minutes.
Add chicken and broth, bring to a boil.
Add cilantro and seasonings, turn down heat and simmer for 30 minutes.
Serve with brown rice or Tortilla strips, avocado and Cotija cheese.
