Introduction

These are very low carb and suitable for all phases of Atkins, Keto diets and Primal. Omit the cheese for the Paleo diet. You can use your protein bar pans, the bottom of muffin cups or muffin top pans. I used my Twinkie pan and it worked great. I added two more slices of bacon, two eggs and another ounce of sausage then doubled the whole thing. I also added garlic, spinach and mushrooms. I put them in baggies for my husband to take all week to work while he is doing the low carb diet. They warm up great but are also good cold according to him. Ingredients

    6 large Egg, fresh, whole, raw
    5 serving Bacon, Oscar Meyer Turkey Bacon (1 slice)
    5 serving Louis Rich Turkey Smoked Sausage
    .25 cup, chopped Onions, raw
    .5 cup Spinach, fresh
    0.5 cup Cheese - Kraft Shredded Cheddar Cheese
    .5 cup, pieces or slices Mushrooms, fresh

Directions

Preheat oven to 350º. Oil your muffin/pan slots with oil using a brush and set aside. Beat the eggs with the shredded cheese in a medium mixing bowl and set aside. Using a non-stick skillet, brown the bacon. Add the sausage crumbled, stirring and cooking until it is no longer pink. Add onion and sauté just until onion begins to cook/wilt. Remove from heat and cool 1-2 minutes. Add the meat mixture to the egg mixture and beat together well with a spoon. Using a ¼c. measuring cup, scoop up ¼ c. of the mixture into each of 8 slots. Pop into preheated 350º oven for about 18-20 minutes until just set and barely beginning to brown on tops. Remove from pans/slot with a knife tip and serve at once.
