Ingredients

Dreamfields Low-Carb Elbow Pasta (dry weight, 5 net carb), 8 oz dry, cooked according to package directions in salted water and well drained
Olive Oil, 9 tbsp
Red Ripe Tomatoes, 16 cherry, halved
Busseto Dry Salami Herbes de Provence, 8 oz, diced
Celery, raw, 4 stalk, medium (7-1/2" - 8" long), thinly sliced
Fresh yellow peppers, 2 large, ribs and seeds removed, cut into thin strips
Mozzarella Cheese, part skim milk, 8 oz, diced
Oregano, dry 1 tsp, or fresh minced 1/4 cup
Salt and pepper to taste
Directions
Cook the pasta and drain well; toss in bowl with 1 Tbsp olive oil. Let cool to room temperature stirring occasionally.
Add the rest of the ingredients, toss gently. Serve immediately or refrigerate until well chilled.
