Ingredients

    0.25 tbsp Extra Virgin Olive Oil
    0.5 medium (2-1/2" dia) Onions, raw
    1.0 cup, chopped or diced Broccoli, fresh
    1.0 serving 1 Med. Green Bell Pepper
    74.0 gram(s) bell pepper, red, sweet, raw
    8.0 large Egg, fresh, whole, raw

Directions

Preheat oven to 400. Grease muffin tin with oil. Mix veggies in large bowl and divide equally among muffin tins. Beat eggs in large bowl. Season with fresh ground black pepper. Pour in muffin tins. Bake 15 to 20 minutes or until tops are browned.
