Ingredients

    1.5 lbs Okra, sliced
    2 28 oz Cans Tomatoes,
    1 large Onions, raw, chopped
    1 stalk Celery, raw, chopped
    1 tblsp Parsley, dried,
    1/2 teasp tony cachere salt free seasoning
    1/2 teasp file (also called gumbo file)
    3/4 teasp Poultry seasoning
    1/2 lb Tyson boneless, skinless chicken breast
    2 slices Ham, extra lean, (5% fat), diced
    1 tbls Bay Leaf, (about 3 leaves)

Directions

combine all ingredients in a crock pot and cook for 6 to 8 hours. Add more file and tabasco to taste.

    I am going to add diced green peppers to complete the Trinity and .5T of Thyme. Smoked turkey sausage, or Amy's low fat Chicken Andouille sausage can be substituted for the ham. I am adding this to my cookbook to try later. Good job!
