Introduction

I found this at www.justchickenrecipes.com and had to tweak it a bit based on what I had on hand (and the fact that I like a bit more spice). It also called for "skinned" chicken thighs but I had skinless so it didn't come out quite as carmelized or glazed as I would have thought. Ingredients

    * Chicken Thigh, 10 oz.
    * Chicken Wing, 2 wing
    * Onions, raw, .5 cup,
    * Tomato Paste, 0.2 cup
    * 3 tbsp water
    * Worcestershire Sauce, 2 tsp
    * Honey, 1 tbsp
    * Vinegar, 2 tbsp
    * Low Sodium Soy sauce 1 tbsp
    * Garlic, 4 cloves finely chopped
    * Ginger Root, 1 tsp finely chopped
    * Garlic powder, to taste
    * Onion powder, to taste
    * Olive Oil (in mister)

Directions

Preheat oven to 400 degrees.
Place chicken pieces in roasting dish and sprinkle with salt, pepper, garlic powder and onion powder. Spray chicken with oil mister and bake for 15 minutes.
Meanwhile, mix the tomato paste, water, worcestershire sauce, honey, vinegar, soy sauce, garlic and ginger in a small bowl.
Pour the glaze over the chicken and sprinkle the onion on top (I sauteed mine first with garlic . . .I am sure either way works well) and continue baking for about another 10 minutes; turning once half way through.

Serve with either rice or mashed cauliflower.

DELISH. Smells great too!!
