Introduction

Adapted from a cooking light magazine - the recipe called for pork tenderloin, but I had the ribs so decided to try it. Great with Pineapple Salsa or a nice green bean salad. Ingredients

    1 cup Lime Juice, Fresh Squeezed
    2 tsp Pepper, black
    2 tsp Dried Oregano
    2 tsp Cumin (ground)
    1.5 tsp Salt
    6 cloves Garlic, minced
    2 lbs Pork, fresh, loin, country-style ribs, separable lean only, raw

Tips

If you do not have enough lime juice, you can mix lime and lemon juice. I have not tried with just lemon juice.


Directions

Combine all ingredients except for pork and mix well. Place pork in zip-top bag and pour marinade over top. Seal and let marinate in refrigerator for about an hour.

Prepare grill.

Remove pork from marinade. Place the ribs on the grill, flat side down, and cook until the pork is browned and crusty on the bottom, about 5 to 7 minutes. Flip, and grill for about 5 to 7 minutes more. Turn ribs on thin side (you may need to prop them up against one another), grill for about 4 to 6 minutes. Flip to the other thinner side, grill for about 4 to 6 minutes more.

Transfer to a clean serving platter, tent loosely with foil, and let rest about 5 minutes before serving.
