Introduction

Ingredients

    3/4 cup chopped yellow onion
    1/4 cup julienned shallot
    10 cloves Garlic, pressed
    5 cloves garlic, julienned
    1 tbsp minced serrano pepper (remove seeds for less heat)
    3/4 cup red wine
    3 tbsp brown sugar
    3 tbsp fresh basil, finely chopped
    1 tbsp fresh oregano, minced
    1.5 tsp crushed red pepper (or to taste)
    6oz can tomato paste
    1/4-1/2 tsp frsh ground black pepper
    4 Roma tomatoes, chopped (approx 100g)
    1000g chopped heirloom tomatoes (any tomato will work)


Directions

Heat oil in pan. Add onion, shallot, garlic, and serrano, then sautee until beginning to brown (about 5 mins). A wine, sugar, basil, oregano, crushed red pepper, tomato paste, and black pepper one at a time, stirring well between each ingredient. Add tomatoes and stir in well. Bring to a boil, stirring regularly. Reduce heat to low and simmer for 20-30 mins, stirring occsionally, making sure the tomatoes reduce. Taste. You can now add additional basil, oregano, sugar, salt, or crushed red pepper as needed.
