Introduction

This is a hearty lunch for people who like food with real flavor and a little bit of spice. This is a hearty lunch for people who like food with real flavor and a little bit of spice.
Number of Servings: 6

Ingredients

    White Navy beans, 1 can drained and rinsed.
    One can of tuna, drained.
    Celery, 3 stalked diced.
    Carrots, 2 small diced.
    Red pepper, 1/2 diced.
    Yam, 1 small steamed cubed and salted.
    Green onions, three chopped.
    Orange juice, from 1 fresh orange
    Lemon juice.
    1 clove garlic.
    Coconut milk, 1/2 can.
    1/2 tsp. green curry paste.
    salt and pepper to taste.

Directions

Peel a yam, chop it up and begin to steam it until tender. While the yam is steaming; dice carrots, celery, red pepper, and onion. Place into a large bowl. Add tuna and beans to the bowl. In the blender combine garlic, coconut milk, orange juice, lemon juice, salt, pepper and thai green curry paste, blend until creamy. Add the contents of the blender to the bowl. By this time the yams should be done and can be added to the salad.

    Very Good
    Very tasty. I increased the amount of green curry paste to at least 1 teaspoon (I like spicy) and used lite coconut milk. Also, since I didn't have any navy beans I used cannellini beans. - 11/9/09
