Ingredients

2 Tbsp. good quality Balsamic Vinegar
2 Tbsp. Red Wine Vinegar
2 tsp. Dijon Mustard
2 tsp. liquid Honey
1 clove Garlic, minced
1 tbsp. onion, finely minced
1/2 tsp. fresh, Thyme, finely chopped
1/2 tsp. fresh oregano, finely chopped
1 Tbsp. finely chopped Parsley - optional
1/2 tsp. salt
Pinch of freshly grated Pepper
5 tbsp Extra Virgin Olive Oil
Tips
Keep left over dressing in the fridge but remove before serving to allow the olive oil to warm up. You can use dried herbs if you don't have fresh but start with 1/4 tsp.
Directions
Mix everything together well and set aside for flavors to meld. Serve over greens of your choice.
