Introduction

Ingredients

    1 medium Summer Squash, sliced
    2 cup, sliced Zucchini (about 2 medium sized)
    1/2 cup Red Onion Raw
    3 medium whole Tomatoes, sliced
    1/2 cup Parsley, chopped
    3 medium sized tilapia filets
    1/4 cup Shredded Asagio
    6 tbsp Butter, salted
    5 tbsp Extra Virgin Olive Oil
    Juice of one lime
    Juice of one lemon
    Garlic salt, Italian seasoning, salt and pepper to taste

Directions

Sliced up the squash and the tomatoes, chopped the parsley and halved the lemon and limes.
Spray down the dish with non-stick cooking spray
Layer in the squash, zucchini and chopped red onions, followed by a drizzle of olive oil, some sea salt and some fresh cracked pepper, then sprinkle the juice of half a lime over the top.
Layer on the tilapia, drizzle some olive oil, sprinkled with garlic salt, lemon pepper, and italian seasoning. then sprinkle the juice of half a lemon over the top.
Top the fish with the rest of the squash and zucchini, some chopped parsley and onions and the butter cut into pats.
Add tomatoes, more parsley, salt, pepper, lime juice and the freshly shredded asagio.
Cover with foil and bake at 350 degrees and set the timer for 35 minutes. For the last five minutes, switch the oven to the broil setting to toast the cheese.
