Ingredients

    2 cans Black Beans, rinsed
    1.0 can yellow Sweet Corn, rinsed
    1.0 cup dry quinoa (cook according to pkg)
    2.0 cup, shredded Cheddar Cheese
    2.0 cup red Enchilada Sauce
    2 bell pepper, red/orange, chopped
    1.0 chopped Onion
    1.0 tbsp Olive Oil
    3 cloves garlic, minced
    1 tsp cumin
    2 tsp cilantro
    Juice 1 lime
    1 tbsp chili powder
    Dashes of cayenne pepper

Directions

Saute onion and garlic until soft, 5 min Add peppers and corn, cook 3 min more Add seasonings Mix together beans, sauce, and veggies with 1 cup cheese. Pour into 9x13, top with remaining cheese. Bake uncovered 30 minutes
