Ingredients

    4 Tbs Land O Lakes Light Butter
    1 small Onion, chopped
    12 Potatoes, raw
    1 tsp Garlic powder
    1 dash Pepper, black
    0.5 tsp Crushed Red Pepper

Tips

This dresses up nicely. Try it with seared chicken breasts, throw a handful of chopped turkey bacon into it, or lace it with a little swiss cheese for a tasty variation.


Directions

Scrub and slice potatoes to 1/4 inch. Use a mandolin slicer if you have one. Rinse under cold water and drain.
In fresh water, par-boil potatoes 20 minutes
Melt butter in a heavy skillet over medium heat
Saute onions 1 minute
Add potatoes and seasoning.
Cook 6 minutes.
Turn potatoes and cook an additional 6 - 8 minutes, until the bottom has browned.

Serving Size: makes 13 one cup servings

    This turned out great. I only made minor changes, such as adding mini sweet peppers, a little salt to taste, and only had one potato on hand, but it was easy to make and had a lovely flavour. I will definitely make this again. - 1/10/21
