Introduction

Makes 5 portions to blend for sauce/pizza topping. I use 1 portion to make pasta for our family of 2 adults 3 kids. Alternatively I don't blend and use the roasted veg stirred through couscous. Ingredients

    2.0 tsp Oregano, ground
    3.0 cup, cubes Eggplant, fresh
    2.0 clove Garlic
    150.0 Grams Mushrooms, fresh
    2.0 medium (2-1/2" dia) Onions, raw
    1.5 cup, sliced Zucchini
    2.0 tbsp Extra Light Olive Oil
    150.0 gram(s) bell pepper, red, sweet, raw
    3.0 cup Canned Tomatoes

Directions

Chop all vegetables, mince garlic, and put all in roasting tray. Drizzle oil and sprinkle mixed herbs then stir. Cook 180-200°c for 30-45 mins. Complete if using for couscous. For sauce...... Stir through the tinned tomato and, if desired, a pinch of brown sugar. Blend and portion into tubs. Serving Size: Makes 5 portions as pasta sauce
