Ingredients

    1.5 cup Whole Foods 365 Organic 100% Whole Wheat Pastry Flour (by DS1222)
    1 tsp Baking Soda
    .66 cup Granulated Sugar
    2 medium (7" to 7-7/8" long) Banana, fresh
    .5 serving Chobani 2% Plain Greek Yogurt (8 oz)
    2 large Egg, fresh, whole, raw
    .7 cup, chopped Walnuts
    0.5 cup Musselman's Home Style Natural Unsweetened Apple Sauce
    2 tbsp Butter, unsalted
    .5 tsp Salt
    1 tsp Vanilla Extract

Directions

Preheat oven to 350. Mix melted butter, sugar, and applesauce. Add eggs and vanilla and mix well. Stir in flour, salt, and baking soda. Add the bananas (should be very ripe), either sliced into small pieces or added whole and then mashed. If mashing the bananas, some chunks of banana should remain in the batter. Fold in greek yogurt and walnuts.

Fill greased muffin tins (or tins with paper liners) . Bake until golden, about 10-12 minutes. When done, a toothpick will come out clean unless the toothpick goes through a banana piece : )

Can also be done with larger muffin tins or as a loaf.

Serving Size: Makes 18 small muffins.
