Ingredients

    2 1tsp Canola Oil1 cup, chopped Onions, raw
    1 cup, chopped Peppers, sweet, red, fresh
    .5 cup, chopped Carrots, raw
    0.5 cup Peas, frozen
    .5 cup, diced Celery, raw
    1 cup basmati rice
    1/2 tsp. salt
    .33 tbsp Curry powder
    1 1/2 cups water


Tips

You can vary the veggies depending on what you have on hand. Mushrooms are also very good.


Directions

Saute' vegetables in oil until just wilted. Add salt, curry powder, rice and water. Bring to a boil. Cover, reduce heat to simmer and cook for 25 to 30 minutes.
