Ingredients

    8 oz yogurt Greek Gods Poseidon Greek Yogurt nonfat plain
    1 medium (7" to 7-7/8" long) Banana, fresh
    2 large Egg, fresh, whole, raw
    1 tsp Vanilla Extract
    2 cup Quaker Oats Old-Fashioned Rolled Oats
    1.5 tsp Baking Powder
    1 tsp Baking Soda
    .5 tsp Salt
    2 cup Blueberries, fresh
    1.5 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    3 tbsp Honey
    .75 cup Flour, King Arthur Unbleached White Whole Wheat (by GYPSYPITCREW)

Directions

Preheat oven to 350 degrees. Spray 12 muffin cups with non-stick spray or paper liners. Combine all wet ingredients first and then add the dry ingredients except blueberries, and mix well. Fold in 1 1/2 cups of the blueberries, reserving 1/2 cup. Evenly divide the batter between the 12 muffin cups and then push the remaining blueberries into the top of the muffins. Bake for 25 minutes.
