Introduction

This is a great fresh dressing that doesn't have that sour bottled taste and is easy and quick to make. It doesn't take lots to make your wedge or other salad taste great. Ingredients

    2/3 cup half and half
    2.3 cup mayonnaise
    1 oz crumbled blue cheese (or Roquefort) (about 2 or 3 tablespoons)
    4 teaspoons tarragon vinegar
    1/2 teaspoon kosher salt (or to taste)
    1/4 teaspoon freshly ground black pepper (or to taste)

Tips

The dressing will last at least a week in the refrigerator. Some folks use full cream in place of the half and half. I haven't tried fat free half and half but if you do, let me know how it works!


Directions

Mix all ingredients in a food processor (a mini one works great) until smooth. If desired, add a few very small sprinkles of additional blue or Roquefort cheese for texture. Refrigerate at least an hour for full flavor.

Serving Size: makes 12 servings of 2 tablespoons each
