Ingredients

    1.0 tbsp Coriander seed
    2.0 tbsp Curry powder
    1.0 tsp Ginger, ground
    1.0 tsp Pepper, black
    0.5 tsp Turmeric, ground
    2.0 tsp Salt
    2.0 tbsp Coconut Oil
    30.0 ounces Chicken Breast (cooked), no skin, roasted
    1.0 cup (8 fl oz) Chicken Broth
    0.5 cup, chopped Onions, raw
    4.0 cup, cubes Yams
    1.66 cup Del Monte Petite Cut Diced Tomatoes
    1.66 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)

Directions

Saute onions in coconut oil until translucent. Add spices, stir, and saute until fragrant. Add chicken and sweet potatoes, stir to coat. Add tomatoes, coconut milk, and broth, stir well. Bring to a boil and then lower heat to a bare simmer. Simmer uncovered for two hours or until potatoes are very soft and liquid has thickened. Serving Size: Makes 4 adult portions
