Introduction

This is a great vegetarian dish with loads of veggies and just enough spice to leave you with a tingle. It can be easily made vegan by nixing the cheese or replacing it w/ a vegan equivalent. Ingredients

    You will need:
    2 cups of any kind of spicy pepper pasta sauce (for zest, I used Racconto)
    3/4 cup of eggplant sliced vertically then cut into inch slices
    1/4 cup of green bell pepper, sliced
    1/4 cup of red bell pepper, sliced
    1/4 cup of orange bell pepper, sliced
    1/4 tsp of Mrs. Dash Lemon pepper or equivalent
    2.5 Tbsp of a Bruschetta sauce w/ artichoke (I used Racconto)
    2 Tbsp of freshly grated parmesan chs or equivalent
    1 whole Roma tomato

Directions

-Preheat the oven to 375 degrees F and get out a shallow casserole dish that would hold about 2 cups .
-Next, you're going to want to spread a 1 & 1/4 cup of the spicy pepper sauce and 2 Tbsp of the bruschetta across the bottom of the casserole dish so that it's completely covered.
-On top of this you are going to lay the 3/4 cup of eggplant and then cover the eggplant with the peppers, spreading them out evenly. After you have placed the veggies in the dish, sprinkle on 1/4 teaspoon of the Mrs. Dash seasoning.
-Pour the remaining pasta sauce (3/4 cup) and bruschetta (1 Tbsp) over the veggies, covering them.
-Next, spread out the thin slices of roma tomatoes over the sauce so they cover as well as possible and grate 2 Tbsp of fresh parmesan cheese on the top to seal the deal.
-Place on the top rack in your oven and cook for 25-30 minutes.

This recipe yields a little over two 1 cup servings and is delicious over white rice.
