Introduction

This is an adaptation of a basic banana bread recipe. In place of the nuts, I love the coconut, which is a great alternative to nuts to still give it some texture. Ingredients

    6 medium (7" to 7-7/8" long) Banana, fresh
    10.74 tbsp Crisco Pure Vegetable Oil
    4 cup Flour, white
    6 large Egg, fresh, whole, raw
    2 cup, shredded Coconut, raw
    16 tbsp Chocolate, Nestle Real Semi-Sweet Chocolate Chips
    2 cup Granulated Sugar
    1 tsp Vanilla Extract

Tips

This could be significantly lightened up using applesauce in place of the oil and a healthier flour.


Directions

Combine all ingredients and bake at 350 degrees for about 40 minutes.
