Ingredients

    2 ruby red grapefruits
    2 tablespoons of Olive Oil
    3/4 teaspoon Salt
    1 avocado, peeled, cored, and diced
    1/4 cup red onion thinly sliced
    6 cups of Romaine (or Arugula)

Directions

Makes 2 big salads or 4 small salads.

Cut grapefruit into segments over a bowl to catch the juice. Keep the juice in the bowl. Put the segments in the frig to stay cool.

Take 1/3 cup of the saved grapefruit juice and whisk in olive oil and salt. Set it aside.

In a bowl, put in the lettuce, avocado, grapefruit segments, and onion. Toss lightly and add on the dressing.

    So delicious! I didn't have red onion but some green onions were fine instead. Diced cucumber added as well. Cheated with prepared grapefruit segments because, again, that's what I had on hand. - 6/23/15
