Whole Wheat Tortillas make the perfect thin crispy crust! Whole Wheat Tortillas make the perfect thin crispy crust!
Number of Servings: 3


    3 Low Carb Tortillas
    3/4 c. Part Skim Milk Mozzarella Cheese, Shredded
    15 Jumbo Black Olives, Sliced
    1 7 oz. can sliced mushrooms, drained
    3 c. fresh baby spinace
    3 t. garlic, minced
    1/4 c. tomato puree
    1 T. Extra Virgin Olive Oil


Saute' Spinach, mushrooms, olives and garlic in non stick pan until spinach is wilted.

Place tortillas on non stick baking sheet. Brush with olive oil and divide tomato puree evenly between the three, using the back of a spoon to spread as close to the edges as possible.

Divide the Spinach mixture evenly between the three tortillas, top with shredded cheese and bake in 400 degree oven for 10 minutes or until cheese is bubbly and golden brown. Serves 3.

    I LOVE this recipe. The crust is great, & so are the toppings. A note to help others--tomato puree can be made by adding water to tomato paste. - 7/5/08

    I make this all the time when I want pizza but omit the cheese and use fresh mushrooms and one sliced olive. - 5/23/08
