Ingredients

    2 lbs boneless chicken breast, cut into bite-size pieces
    1-2 tablespoon olive oil
    1 garlic clove, crushed
    1/4 teaspoon ginger
    3/4 teaspoon crushed red pepper flakes
    1/4 cup apple juice
    1/3 cup light brown sugar
    2 tablespoons ketchup
    1 tablespoon cider vinegar
    1/2 cup water
    1/3 cup soy sauce

Directions

Directions
Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes.
Serve over hot rice and ENJOY.

    Incredible!
    Oh... my... god. This was amazing. Very similar to the honey chicken my hubby loves. I simmered the liquid for 10 min, added the chicken raw (dark meat), and then boiled the heck out of it until the sauce turned thick and the chicken browned a bit. I also used low sodium soy. This is a keeper! - 8/24/13

    I love this recipe for bourbon chicken. I use 1/2 of the soy sauce called for, to reduce the sodium level. If you must, serve soy sauce on the side. - 5/27/12

    It was delicious, but incredibly salty. I will make this again with low-sodium soy sauce to see if it makes a difference. Discounting the saltiness, the flavor was quite delicious. (I did cheat and substitute bourbon for the apple juice. It is bourbon chicken, after all!) - 5/12/12
