Introduction

The poor man's crab cake. The poor man's crab cake.
Number of Servings: 8

Ingredients

    1/2 cup onion, finely chopped or grated
    1 14.75 oz. can of Alaskan Pink Salmon
    1 TBsp I Can't Believe It's Not Butter or other light spread, melted
    1/2 cup onion, finely chopped or grated
    1 small potato. Finely grated
    1 slice Nature's Own Whitewheat Bread (or any bread, crust removed)
    1 whole egg
    1 tbsp Peanut Oil
    4 saltine crackers, crushed
    1/2 tsp powdered garlic
    1 tsp garlic herb seasoning (like Mrs. Dash or Perfect Pinch)
    1to 2 tsp Old Bay Seasoning, divided
    1/4 tsp Cayenne pepper

Directions

Saute onion on low heat; set aside to cool. Drain and clean salmon. Stir in all other ingredients, including seasonings. Form into patties , sprinkle with more Old Bay Seasoning, if desired, and saute over medium heat in peanut or other healthy oil until brown.

Serving Size: Makes 8 3-inch cakes
