Introduction

A tasty salad that goes well with my Red Wine & Dijon Vinagrette. Calorie count excludes dressing. Ingredients

    1 fruit (2-5/8" dia) Oranges
    2 slices (6 per 6-oz pkg.) Canadian Bacon
    2 oz Walnuts
    56 gram(s) Feta Cheese (Tre Stelle, light feta)
    .125 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    6 cup Baby Spinach (raw)
    .5 bulb Fennel

Directions

Cook bacon and crumble when cool. Gently toast walnuts in bacon fat then chop coarsely. Chop fennel and oranges in bite size pieces. Crumble feta. Assemble ingredients, and add your favorite dressing. Enjoy!
