Ingredients

    2 cup, sliced Zucchini
    16 oz Jennie-O Turkey Store - Extra Lean Ground Turkey Breast with Natural Flavorings
    3 serving Del Monte Summer Crisp Corn (1/2 cup)
    1.75 cup Del Monte Petite Cut Diced Tomatoes
    5 serving(s) Near East Couscous (Original Plain)
    1.5 tbsp Extra Virgin Olive Oil
    1 tsp Cumin seed
    1/2 tsp minced onion
    1/2 tsp minced garlic
    Sriracha sauce to taste (not included in nutrition info).
    Salt and pepper to taste

Directions

1. Heat 1 tbsp olive oil in a large pan.

2. Brown turkey in the pan.

3. Once turkey is cooked all the way through, add minced onion and minced garlic.

4. Add tomato (undrained), corn (undrained), zucchini, 1/2 tbsp olive oil, and cumin seed.

5. Let simmer until zucchini is soft.

6. Cook couscous according to instructions.

7. Stir together turkey mixture and couscous and add salt and pepper to taste.

8. Serve with sriracha sauce if desired.

Serving Size: Makes 7 2-cup servings
