Introduction

Carb free bread substitute, can be used as sandwich rounds or other things you might use bread for. Most cloud bread has cream cheese in it but this one is made with Ricotta instead. Carb free bread substitute, can be used as sandwich rounds or other things you might use bread for. Most cloud bread has cream cheese in it but this one is made with Ricotta instead.

Ingredients

    3 Large Eggs
    3 Tbsp whole milk Ricotta Cheese
    1/4 tsp Cream Of Tartar
    Pinch of Salt and other seasonings if desired
    1/2 packet Stevia In The Raw Sugar Substitute (optional)

Directions

Separate eggs. Add cream of tartar to whites and beat until stiff peaks form. In another bowl beat yolks with ricotta, salt, and stevia. Add other seasonings if you would like (completely optional). Gently fold whites into yolk mixture being careful not to over mix. Spoon 10 even mounds about 2" apart on parchment paper lined cookie sheet. Bake on middle rack at 300 degrees for 20 minutes, then move to top rack and broil until tops brown slightly.
