These are Gluten free, dairy free naturally sweetened chocolate muffins, about 185 calories per muffin. (161 if you leave out chocolate chips) High in protein, good fats and fiber. Ingredients

    2 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    .5 cup Rice flour, brown
    1 serving Aloha Nu Coconut Flour 1/2 cup (by CYBERGRANNY1)
    1.25 tsp Baking Powder
    .5 tsp Baking Soda
    1.5 tsp Cinnamon, ground
    2 medium (7" to 7-7/8" long) Banana, fresh
    .33 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    .25 cup Honey
    1 tsp Vanilla Extract
    1 cup, sliced Zucchini
    0.25 cup Egg whites, Naturegg Simply Egg Whites, 1/4 cup = 2 egg whites
    .25 serving Apple Sauce-Natural-no sugar added(Jewel brand)(4oz)
    2 tbsp Chia Seed (Nutiva) 1 Tbsp

Tips

I used sprayed silicone muffin pan, I filled all of my muffins clear to the top and then topped with a few chips each. Being Gluten free - you may need to bake a little longer


Directions

Mix dry ingredients together
In blender mix wet ingredients together
Mix wet in dry until just moistened - don't over mix
Put in 12 muffin cups
Bake 375 for 20 to 25 minutes
