Ingredients

    Chicken breast strips, chopped 6oz, 1

    Mixed vegetables, 8 .25 oz, drained

    Cream of Mushroom Soup, 1 can (10.75 oz)

    Idahoan instant roasted garlic mashed potatoes

    Onions, raw, .05 cup, chopped

    Colby and Monterey Jack 2 % cheese 1/2 c, 0.50 cup

Directions

Make potatoes according to the package directions.

Cut chicken strips into bite-sized pieces, then mix with drained veggies, mushroom soup, and chopped onions. Add 1/4 cup cheese to this mixture.

Put into sprayed 8x8 inch pan and top with mashed potatoes. Makes 4 servings.

Bake at 350 degrees for 25-30 min until heated through. Add 1/4 c. cheese 5 minutes before taking out of oven. Let stand for 5 minutes before serving.

Can use different meats, soups, and veggies for variety.

    Great recipe, however, to reduce calorie intake, try using mashed cauliflower instread of instant mashed potatoes. Tastes the same and is better for you - 3/16/09

    This is a very easy & versatile recipe. I used mashed cauliflower with some garlic in place of the mashed potatoes....great way to cut even more calories & you can't taste the difference. - 10/13/08

    We enjoyed this recipe very much. I used frozen broccoli and cauliflower mixture instead of canned for a fresher taste. Very good! - 6/18/08
