1/2 cup Carrington Farms Organic Coconut Oil
1 medium Egg, fresh, whole, raw
1 tsp Vanilla Extract
1 3/4 cup Bob's Red Mill Organic Spelt Flour (1 serving = 0.25 c or 30 g) (by DS1222)
1 tsp Baking Soda
1/2 cup Bob's Red Mill Almond Meal / Flour 1/4 Cup (by KEEPINITREALOC)

Directions
1.Place an oven rack in the lowest position of the oven and place a second rack in an upper position. Preheat oven to 375 degrees F (190 degrees C)
2. Beat coconut sugar, coconut oil, egg and vanilla extract together in a bowl with an electric mixer until smooth. Mix flour, banking soda, and almond meal flour in a separate bowl. Stir in flour mixture into coconut sugar mixture until combined.
3. Bake in preheated oven on the lower shelf for 5 minutes. Transfer baking sheet to upper shelf; bake until edges are lightly browned, about 5 more minutes.
Serving Size: Makes 14 cookies about 2.5 inches in diameter
