Introduction
This is a variation of Pine Nut Cream Sauce from Veganomicon. I used cashews and some toasted sesame seeds instead of pine nuts, since that's what we had on hand. It was delicious! Ingredients

1 lb soft silken tofu
1/2 C RAW cashews
2 tsp toasted seasame seeds
3 T lemon juice
1 T cornstarch or arrowroot
1.25 tsp salt
1 clove garlic
dash nutmeg
dash white pepper
Directions
This makes maybe 1.5 cups? Definitely enough to top a 9x13 lasagna or the like, with some to spare.
Put the cashews, sesame seeds and lemon juice in a food processor or blender and blend until creamy/pasty. You may need to add a few teaspoons of water. Add the remaining ingredients and blend, scraping down the sides with a spatula a few times, until everything is creamy and uniform. Check for seasonings and adjust if necessary.
Use to top lasagnas, eggplant or tofu parmigiana, pizza or anything that requires a creamy delicious sauce!
