Introduction
A delish Almond Flavored cookie that is chewy coming out of the oven and becomes harder over time. Also called Amaretti Cookies. A Gluten Free option! A good treat during Passover, as well. Ingredients

3 Cups almonds, slivered and blanched
1 Cup granulated Sugar
1.5 tsp Almond Extract
3 Egg whites, large
Directions
1. Preheat oven to 300 degrees F. Line baking sheets with parchment paper.
2. In a food processor, grind the almonds into a fine meal [I also used a coffee grinder to get an even finer grind]. Add the sugar and continue to process for an additional 15 seconds. Finally, add egg whites and almond extract and continue to process until a smooth dough forms around the blade.
3. Using a melon baller or teaspoon to form well rounded spoonfuls of dough onto prepared baking sheets. [I actually rolled mine into balls]. Cookies should be placed 1.5 inches apart.
4. Bake in preheated oven for 20 to 30 minutes. Cookies should be golden. Allow cookies to cool completely on the paper before removing. Store in a dry place.
