Ingredients

    1.0 tsp Thyme, ground
    0.5 tbsp Salt
    2.0 cup, chopped Carrots, raw
    2.0 stalk, large (11"-12" long) Celery, raw
    2.0 cup, pieces or slices Mushrooms, fresh
    1.0 cup, chopped Onions, raw
    1.0 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    1.0 cup (8 fl oz) Water, tap
    1.0 cup (Pictsweet) Collard Greens, choped, frozen
    1.0 serving Roast Chicken Leg, with skin
    3.0 ounces Chicken Breast (cooked), no skin, roasted
    1.0 serving Chicken Out 1/4 Dark Chicken Thigh and Leg (no skin)

Directions

Prep time: approx. 15 min. Cook time: approx: 1 hour Split a whole raw chicken in half. Skin, de-bone and boil in a large stock pot. Add salt and thyme. Remove cooked chicken from pot, cut to bite size and set aside. Slice mushrooms and potatoes and chop all vegetables to bite size. Add to chicken stock. Boil until vegetables are soft. Add chicken back in with vegetables and simmer for 30 minutes. Serving Size: Makes 12 1-cup servings
