Ingredients

    1lb lean ground turkey
    1/4c fiesta shredded cheese
    1/2c fat free shredded cheddar cheese
    1/2c canned corn
    1/4c green peppers, chopped
    1/4c onions chopped
    1/2c salsa
    1/2 packet dry taco seasoning

Directions

preheat oven to 375.

cook peppers and onions for 3 mins in med. heat
In a large bowl, combine onions and peppers with turkey,corn,and seasoning mix. Spread 1/2 of the mixture evenly into the bottom of a loaf pan sprayed w/ nonstick spray. sprinkle fiesta cheese on top and then top with the remaining meat mixture.
pour the salsa on the top of the loaf cook for 30 mins
top loaf with shredded cheese. return loaf to the oven and cook for another 15 mins.
