Ingredients

2 tbsp Bob's Red Mill - Organic Whole Ground Flax Seed Meal
5 Tbsp Water
3 medium very ripe Bananas
3/4 Cup Brown Sugar (lightly packed)
1/2 cup Canola Oil
1 tsp Vanilla Extract
2 Cups Bob's Red Mill Gluten Free 1 to 1 Baking Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tbsp Cinnamon
1/2 tsp Salt
1/2 Cup chopped walnuts
Tips
This is lovely sliced and toasted. Can use chocolate chips instead of walnuts for different family preferences.
Directions
Combine flax seed and water and allow to sit in the fridge for about 15 minutes.
Pre-heat oven to 350.
Combine dry ingredients in bowl and set aside.
Mash bananas In mixing bowl.
Add brown sugar.
Add flax mixture from the fridge, oil, & vanilla.
Add dry ingredients and mix until just combined.
Mix in walnuts.
Bake in a 9x4 inch loaf pan for 50 minutes or until toothpick inserted in center comes out dry.
Serving Size: Makes 12 slices
