Ingredients

    2 medium Zucchini, baby
    2 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    1 large Onions, raw
    1 bulb Fennel
    1 tbsp Olive Oil
    .25 tsp Salt

Directions

Diagonal cut the zucchini and peppers. Half the onion lengthwise, then slice into slivers. Slice fennel bulb and a bit of the green stems as well. Sprinkle with salt. Saute with olive oil, or roast at 425 til softened.
