Ingredients

3 1/2 c rolled oats
1/2 c ground flaxseed
1/2c sunflower seeds
1 to 1 1/2 c dried fruit (any combination, chop larger fruits)
1/2 c unsweetened shredded coconut
1/2 c plus 2 tbsp canola oil
1/2 c plus 2 tbsp honey (may sub maple syrup)
2 large eggs, beaten
1/2 tsp vanilla extract
1/2 tsp salt
Optional add-ins (not included in nutritional info):
1 c sliced almonds
1/4 c chocolate chips
Directions
Preheat oven to 350F and prepare a 9x13 baking pan.
Combine oats, flaxseed, sunflower seeds, (and almonds, if using), and toast on cookie sheet for 15 minutes, stirring halfway through. Place in large bowl.
Add dried fruit and coconut and mix thoroughly.
Combine oil and honey and microwave 1 minute, or until honey dissolves. Add to oat mixture and mix thoroughly.
In small bowl, combine eggs, vanilla, and salt, and add to oats. Mix.
Spread evenly into pan. Sprinkle with chocolate chips if using.
Bake 20 to 25 minutes, or until golden brown. Cool. Cut into 18 bars. Store in refrigerator.
